what are the end caps made of?

I installed this system over a year ago on my 34 chevy hot rod which I have since sold. If my memory serves my correctly, they are made of aluminum.

will this fit a 69 327 small block?

Yes it is a universal fit. Beware of the clamps mine were junk and I returned the kit. The kit looks nice but the quality of the clamps are poor.
