Does the skeleton include a hyoid bone?

Yes. You won't find another skeleton with more detail for the price! I highly recommend it. I am a Radiology student and this skeleton looks better than the ones in our classroom.

Is there any movement possible in the spine and pelvis, to demonstrate kinesiology concepts?

Don't know what kinesiology concepts are. Skeleton spine does move. Can make it sit in a chair. Arms and legs are flexible.

does the skeleton include a book to help a 10 year old learn the bones?

The skeleton comes with an outstanding plastic, durable poster the names all the bones. Very scientific! Great to take to school, too.
