Are there any instructions for adjusting this? My door is still slamming no matter what adjustments I make.

I don't have them but go on line and ask google. How to adjust a screen door. I had to adjust how I attached it to the screen door to get the best results. Again good luck.

Is there anyway to disengage the hold open feature on this product

I haven't found one, however it's a fairly light touch to get it to close. You can also open it with some gusto and it will bounce past to the end of it's travel and come close (my kids do this). One finger really and you can get it to close.

Can this be used for an interior hollow door to prevent it from being slammed?

Hi, I don't think so. You should double check the measurements to ensure it fits in the space allowed.
