Q: Is the midi cable/port a substitute instead of all the 1/4" ports and/or be added to another multi effects siganal processor?

Not sure to understand the question, but midi in let pass signal front an other interface and and midi out is the goal of the modul: convert a trigger signal to a midi note. So ddrum is not a multi effect or a sound processor. It just convert piezzo signal from percussion instrument to midi.

Q: I understand the company sells sensors for toms and kick; but how do I connect this to my acoustic drum set cymbals?

You can't, but what you could do is purchase electronic cymbals and run the cord directly to the interface. Pintec is one aftermarket brand that is good. You could also go with Roland or one of the other electronic drum brands.
