Q: Will it work with Zebra printer?

PM1115P2 should work with most printers that use Parallel communication over a Centronics connector, but it hasn't been specifically tested for functionality with Zebra printers. Atha, StarTech.com Support

No, the PM1115P2 allows a Parallel printer to be shared among computers on a network. The Canon MF3010 uses USB to connect to a PC so we recommend using our PM1115U2 to connect this printer to a network. Matt, StarTech.com Support

Q: Will this work with Linux Mint and with stand-alone USB connected scanners?

I have not tested any Linux device. However, the USB (2.0) and ethernet ports are both standard configuration.
