What kind of pan do you use to make injera?

I use a regular frying pan with a lid. Pour the batter as if you were making a crepe, then put the lid on to keep the moisture in (it's what gives the injera its typical texture).

Is your teff flour the same as the one grown in Ethiopia?

Yes. The teff that we grow and mill in Idaho is the same plant that originated and is still grown in Ethiopia.

What is the approximate volume of 16 oz/ How many cups?

Swami, thanks for your interest in Maskal Teff Flour. There are approximately 2-1/2 cups per 16oz Bag. TimThe Teff Company

Is the Ivory Teff, milled more, like white rice, or a different strain of Teff?

Both Maskal Teff varieties (Ivory and Brown) are milled exactly the same way. Ivory Teff is simply a different variety of teff, with a milder, slightly sweet flavor.
